Doesn't look as impressive as the CNY Eve dinner but delicious nonetheless!
Minced Beef with Parsley Soup
Steamed Chicken with Ginger-Scallion Oil Dipping Sauce
Vietnamese-Style Spring Rolls with Crab - my mom's signature dish that NO ONE can even come close to
Steamed Fish with Ginger and Scallions in a Soy Sauce
Veggies Stir-fried with Assorted Nuts on a bed of Taro Chips
Braised Enoki Mushrooms on a bed of Steamed Pea Shoots
BBQ Spareribs - the cousin of BBQ pork, it's basically ribs with a sweet sticky sauce
Sticky Rice - my mom also makes these wrapped in banana leaves, boiled for over 8 hours, then taken out and boiled again for at least 15 before serving.
The sticky rice can be filled with anything from an egg yolk to Chinese sausage but my mom fills her version with yellow bean, shitake mushrooms and a piece of lean pork. Mr. Piglet can eat two of these in one sitting!
Dessert is a classic from Mommy Piglet - a deep fried sesame ball filled with a little ball of sweetened yellow bean paste.
Of the 13 made, Mr. Piglet managed to get the only one filled with green matcha infused yellow bean paste! Mommy Piglet said he would be blessed with wealth as the green means money - I only hope so! Ha!
