Cheddar Bacon Muffins

Cheddar and bacon together in a muffin????  Yeah, I'm totally making these.  And how'd they turn out?  A-W-E-S-O-M-E.  They were so good, Mr. Piglet had no words.  He just sat there crying out of joy as he ate.  Ok, he wasn't crying but he scarfed one down in complete silence.  Word.


Materials needed:
  • Oil-based spray or butter for greasing
  • Muffin tin
  • 2 bowls
  • 1 spatula
  • knife
  • toothpick optional

Ingredients:
  • 1 1/2 cups flour
  • 1 tbsp baking powder
  • 1/2 tbsp sugar
  • 1 cup sharp cheddar cheese (or any good cheese - I think pepper jack would work really well too)
  • 1 pkg of bacon cooked and broken up into small pieces
  • 1 cup milk
  • 1 egg
  • 1/4 cup oil

Directions:

1.  I baked my bacon on a cookie pan at 350-400C for 20-25 min, pulled it out of the oven, laid all of the slices on a paper towel to absorb the excess fat and when it cooled, I chopped them into pieces
2.  Preheat oven to 375C and grease muffin tin (don't use muffin papers because the cheese sticks to them!  I used olive oil spray but you can also use butter - it doesn't matter as long as it's well-greased)
3.  Sift together the dry ingredients and stir in cheese and bacon
4.  In a separate bowl, beat egg, milk and oil together
5.  Add wet ingredients to dry ingredients and mix until just combined - do not overmix and there should be small lumps
6.  Spoon into greased muffin tin and bake for 15-20 min or until toothpick inserted comes out clean
7.  Run a knife along the edges of the muffins right after you pull them out of the oven so it's easier to pop them out later
8.  Eat and enjoy!  
Note: these freeze really well so make more for a rainy day!

  • I also made 8 muffins a bit larger so it took longer to bake - about 10 min more so cook time is dependent on the size of the muffins you're making, so use the toothpick method to determine doneness
  • I might also add some green onions in next time - just a few tablespoons to liven it up a bit and balance out the bacon
