Candied Pecans

The quintessential element to my summer salad...  Easy to make and you can actually just eat them on their own as well.  Yum!
Tools needed:
  • Baking sheet
  • Parchment paper
  • Olive oil spray
  • Stand mixer or medium bowl with electric mixer
  • Spatula
  • Measuring bowls and spoons

Ingredients:
  • 1 egg white - from a large egg
  • 1/3 cup of brown sugar or cane sugar
  • 1 tsp of vanilla extract
  • 3 cups of pecans


Directions:
1.  Preheat oven to 300 F.  Line baking sheet with parchment paper and spray with olive oil spray.  Set aside.
2.  Whisk egg white until soft peaks form.  Add the sugar and vanilla and stir until smooth.  Mix in the pecans and stir until they're all coated.  Pour the nuts onto the sheet and try to spread them out so they're one layer.
3.  Bake until browned, approximately 15-20 minutes depending on your oven.
