Trilussa Pizza & Pane - Vancouver, BC

My friend Saltyfish, also a foodie who loves to eat and try new places, found out I was doing a blog so he suggested this Trilussa Pizza & Pane to me.  He claimed it was real authentic pizza being served by a friend of his and it went immediately onto my list, not because Saltyfish knew the owner but because it claimed to serve real authentic pizza.  The only problem is that list keeps growing and it usually takes several months before I can give restaurants on my list a visit.  So here we are, this is my pick and Monkey is being dragged along!
It's not a big place but I'm immediately drawn in by it's simplicity, a friendly greeting from the owner at the register and something in the back catches my eye.  There are big ovens and a large counter with beautiful pizza on display.  And they're cooking my pizza to order!  OOooooh!  I'm excited!
Trastevere - $5.50 (Regular 5")
Pancetta, Mozzarella and Pecorino
It arrives on a wooden paddle in small pieces, smoking hot and with a touch of oil on top.  I may have a cold but damn, this pizza is GOOD, even through a plugged nose.  The crust is crunchy, super hot and the mozzarella is that perfectly stringy cheese that you only see in cheese commercials.  The pecorino is an AMAZING addition since it's sharpness is just the perfect match to the saltiness and strong flavors of the pancetta.  The pizza is a bit oily but don't be afraid - it's drizzled with extra virgin olive oil and it tastes very good with the toppings.  Awesome, just awesome.  My only disappointment is that fact that I didn't choose the larger size.  Je regret.


Capri - $5.50 (Regular 5")
Potatoes, Pesto and Pecorino
Monkey immediately zeroed in on this pick - who heard of potatoes being on pizza??  Well, don't picture a breakfast pizza because this is not it at all.  It's transparently thin slices of potato atop a tasty pesto with hits of that sharp pecorino cheese again.  That crust is just amazingly thin and crispy, allowing the toppings to shine through.  LOVE that crust.  Monkey also said we should have ordered larger sizes but c'est la vie.  Next time Trilussa!  We'll order your 2 footer!


They topped our pizza in front of us, baked it in front of us, cut it up in front of us and then served it to us piping hot out of the oven.  Will we be back?  Heck yeah!  Once I finished my Trastevere, I already chose the Milano as the flavor to try next time.  Thanks for letting us know about this place Saltyfish!  The pizza is amazingly fresh and delicious in it's own simplicity.  Traditional pizza should only ever have 3-4 toppings (as is served in Rome) at most so the individual ingredients may shine, and shine they do here.  Come to Trilussa and try it for yourself!  Bon appetite!


Pros:
  • Freshly made delicious pizza with fresh ingredients - what more do you want?
  • Friendly service
  • Moderate portion sizes - if you're a bigger eater, you might wanna opt for the larger sizes
Cons:
  • Pay street parking available - and make sure you pay enough because the meter maids here are BRUTAL
  • Slight wait for the pizza but it's because of all the prep and baking time
