Fried Quinoa

So I've done the Kimchi version here so I thought I might as well bring in the Chinese version too!  My mom makes the best fried rice but the rice always sticks to my gut - right there, right in the bottom of the middle of my belly.  Mr. Piglet loves his rice but I'm determined to convert him to quinoa!  So taking a spin from Mama Piglet's recipe is this one here!  It's super simple and you can adjust it a lot of the ingredients to your liking.  Bon appetite!

Tools needed:
  • Large bowl
  • Whisk or fork
  • Measuring cups and spoons
  • Large pot or wok
  • Spatula


Ingredients:
  • 1 cup uncooked rinsed quinoa
  • 2 cups of water or low sodium chicken or vegetable stock
  • 1/3 cup diced white onions
  • 2 garlic cloves, minced
  • 2 tablespoons of cooking oil (I used coconut oil but you can also use canola oil)
  • 5-6 large organic eggs (of course you can use the non-organic kind)
  • 1 cup frozen mixed vegetables, thawed
  • 3/4 cup cooked meat, cubed - I used BBQ Pork from HK BBQ Master (drool) but you can sub in whatever you like including cooked tofu to cooked duck
  • 2 tablespoons of finely chopped green onions and some for garnishing
  • 1 teaspoon sesame oil
  • salt and pepper to taste


Directions:


1.  Add quinoa and water or broth to rice cooker.  Cook and when completed, set aside.


2.  Beat eggs and add mixed vegetables, cooked meat, diced green onions, sesame oil and salt and pepper to taste.  Set aside.


3.  In a wok or large pot over medium high heat, add the cooking oil and diced white onions.  Saute until onions are translucent.  Add garlic and saute for another 3-4 minutes. 
4.  Add egg mixture and cook just until there is no raw egg left.  Add quinoa and mix until everything is thoroughly heated and combined, about 5-7 minutes.


5.  Serve with garnish of chopped green onion.


6.  Eat and enjoy!
