Berry Medley Topping
Ah, berry season is in full effect and these Piglets are taking full advantage! We have some of the best berries in the Lower Mainland and when I saw clams full of raspberries, strawberries and blackberries from a local farm at the Royal City Farmer's Market, I knew I had to buy them and make something. I know local and in-season berries are a tad more expensive than the California or Mexico imported stuff but you get what you pay for - no pesticides, no preservatives, no additives and no ripening on a plane or truck on the ride here. Straight from the farm to your tummies! Besides, whatever they spray on berries, you shouldn't be eating that... ANYHOO, let's make a simple topping for pancakes, waffles, yogurt and more!
- Strainer
- Cutting board and knife
- Large bowl
- Measuring cups and spoons
Ingredients:
- 1 cup blackberries, washed
- 1 cup raspberries, washed
- 1 cup blueberries, washed
- 1 1/2 cup strawberries, washed and sliced
- 3-4 tablespoons honey
- 5-6 leaves mint, thinly sliced or roughly ripped
Directions:
1. Combine all of the ingredients into a large bowl
2. Allow to refrigerate for at least an hour.
3. Eat and enjoy!
Ok, so this can't get any easier... And just check out all of the natural juices that come out!
On top of some blueberry multigrain pancakes... BEST BREAKFAST EVER.
