Blondies

In the mood for something chocolately but I'm not ready to commit to a full out brownie.  What's something like a brownie but not too chocolatey?  Light bulb!  Let's make some blondies!  Here we go!
Tools Needed:
  • Measuring cups and spoons
  • 1 large bowl
  • 9x13 baking pan
  • Electric mixer or large bowl and hand mixer
  • Spatula
  • Olive oil spray or butter
Ingredients:
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped walnuts
  • 2/3 cups butter, melted
  • 2 cups brown sugar
  • 2 large eggs, beaten
  • 2 tablespoons vanilla extract
  • 1 cup semi-sweet chocolate chips
Directions:
1.  Preheat oven to 350 degrees F.  Grease the 9x13 baking pan with olive oil spray or butter. 

2.  Sift the flour, baking powder, baking soda and salt into a large bowl.  Add the chopped walnuts and chocolate chips, mix well and set aside.

3.  In the electric mixer or large bowl with hand mixer, mix the butter and brown sugar together until thoroughly combined.  Allow the mixture to cool.

4.  With the mixing speed on low, add the eggs and vanilla extract until combined. 

5.  Add in the flour mixture and mix with a spatula until just combined (i.e. just when the flour disappears - avoid overmixing or else you'll end up with a cakey brownie)
6.  Spread the batter evenly in the prepared pan.  Bake in the oven for 20-28 minutes or until toothpick inserted into the middle comes out clean.  Remove from oven and allow it to cool for 1 hour before cutting into squares. 
7.  Eat and enjoy!
