Tools Needed:
- Measuring cups and spoons
- 9x13 pan
- Aluminum foil
- Butter for greasing
- 2 large bowls
- Electric mixer or bowl with hand mixer
- Sifter or fine mesh sieve
- Whisk
- Spatula
- Wire cooling rack
For the cookie layer:
- 1 cup butter, at room temperature
- 1/2 cup cane sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups all purpose flour
- 1 1/2 cups semi-sweet chocolate chips
- 1 1/4 cups butter, melted
- 2 cups cane sugar
- 1 1/2 cups unsweetened cocoa powder
- 1 teaspoon salt
- 2 teaspoons vanilla extract
- 4 large eggs
- 1 cup all purpose flour
1. Line the pan with aluminum foil and grease generously - this will help later on in removing the brownies from the pan for easier cutting.
2. To make the cookie layer, cream together the butter and sugars in the electric mixer (or bowl with hand mixer) until thoroughly incorporated. On low speed, mix in the eggs and vanilla extract. In a separate bowl, sift together the flour, salt and baking soda. Add the flour mixture to the butter mixture and mix together with the spatula. Mix in the chocolate chips. Pour the cookie mixture into the prepared pan, spread it out evenly with the spatula and set aside.
3. Preheat oven to 350 degrees F.
4. To make the brownie layer, add the butter and sugar together and whisk until thoroughly incorporated. Sift in the cocoa powder and mix until combined. If the mixture is still hot from the melted butter, allow it to cool for a few minutes and then add the salt, vanilla extract and eggs and mix until combined. Add the flour (no need to sift!) and mix until just combined (do not overmix or else you'll get a cakey brownie!). Pour brownie mixture overtop the cookie mixture and spread it out evenly with a spatula.
5. Bake in pre-heated oven for 35-45 minutes, or until toothpick inserted in the middle comes out clean of brownie batter. Remove from oven and allow it to cool on a wire rack for 2 hours. Lift the entire brownie out of the pan using the foil and set on a cutting surface. Peel back the alumnium foil before cutting. Cut into squares.
